Apple Cinnamon German Pancakes


I was introduced to German pancakes by my friend Carolyn after I had crashed at her house one night. She cooked me breakfast in the morning, and a love affair was born. (Between me and the pancakes.  It wasn’t that kind of night.)

And it was Carolyn who spurred me to make German pancakes this morning despite the fact that she now lives hundreds of miles away.  She texted me this Honey Cloud Pancake recipe, telling me I needed to make it because it was delicious.  I took one look at it and decided I wasn’t in the mood to beat egg whites until they were “white and peaky.”  But, the text had gotten me craving baked pancakes, so I whipped together this tried and tested recipe.  





Apple Cinnamon German Pancakes


¼ cup butter

1 cup all-purpose flour

1 cup milk

6 eggs, lightly beaten

1 teaspoon vanilla

½ teaspoon cinnamon

1/8 teaspoon salt



  1. Preheat oven to 350 degrees.  Melt butter in baking dish (or cast iron pan).
  2. Mix flour, milk, eggs, vanilla, cinnamon, salt together.  Pour mixture into prepared baking dish.  Sprinkle additional cinnamon over top as desired.
  3. Bake in preheated oven for 30 to 40 minutes until golden brown.

Serve warm with maple syrup. 

Makes 4-6 servings.
